Course Description
University Catalog Description: Introduction to the chemical, physical, and sensory aspects of foods. An examination of the scientific principles involved in food preparation, storage, preservation, regulation, and safety.

Upon successful completion of this course, students will be able to:
- Apply the principles of food safety and sanitation in food preparation. ***KRDN 4.5
- Evaluate the quality of food products using sensory and objective evaluation techniques.
- Examine and effectively interpret the physical and chemical properties of food and food additives.
- Apply basic microbiological and chemistry principles to the preparation of food.
- Successfully utilize nutrient databases to analyze the nutrition composition of food.
- Explain the nutritional, cultural, psychological, and sociological criteria involved in food selection.
- Define government food regulations and laws.
- Explore the functionality of food components through scientific experimentation.

*** This outcome is consistent with the following core knowledge outcomes, also known as KRDN Student Learning Outcomes, required by the Accreditation Council for Education in Nutrition and Dietetics (ACEND), the accrediting agency for the Academy of Nutrition and Dietetics: KRDN 4.5: Describe safety principles related to food, personnel, and consumers.
To ensure our students achieve preparatory knowledge to become a registered dietitian nutritionist (RDN), students must successfully complete all 22 KRDNs (Knowledge for Registered Dietitian Nutritionists) assessments, as well as obtain “C” grades or better in all DPD-relevant coursework in order to receive a Verification Statement upon graduation. In this course, a quiz on food safety and sanitation meets KRDN 4.5 – “Describe safety principles related to food, personnel, and consumers.” To pass, students must obtain 80% or greater on this assessment. Students who do not meet the cutoff in the first attempt will be offered an opportunity to re-do the assessment, which does not carry bonus points or change the original grade. If a student is unable to meet a competency after two attempts, the failure to meet the competency will be documented and reported to the DPD director by the end of the semester.
Course Structure
This course is to be conducted online, through live lecture and online coursework. You will participate in the course using Cal State LA learning management system(s) Canvas.

You will need to have an up-to-date browser, operating system and some additional software on your computer to take this class. Check the ITS Helpdesk Student Resources page. Some of the documents in this course will be available to you in PDF form. You will need to download and install Adobe Acrobat Reader software on your computer.
COURSE POLICIES
Regular participation in this course is imperative for success. You must login to the Canvas classroom multiple times each week to participate in discussions and activities.
Attendance
You should attend every class, but extenuating circumstances arise that can make this difficult. If you cannot attend a class, please let me know. If circumstances make you miss more than three classes during the semester, you may be overextended. I ask that you come see me to discuss your options early in the semester. Should you have a medical emergency or need to care for someone due to health issues I will ask that you provide proper documentation such as a doctor’s note with a name and a phone number where they can be reached. Keep in mind, I also might ask for proof of funeral attendance and travel.

Post any questions or comments you have about the course content and/or requirements in the Announcements forum. You can also try to answer other students’ questions through the forum. I will be checking it regularly and give feedback as necessary. Questions of a more personal nature can be sent to me via email at esalami@calstatela.edu
It might take up to 48 hours for you to get an email response from me (or longer). Use office hours or email to discuss coursework. Messages through Canvas will take longer for me to reply.
I will email you about:
- Questions arising from difficulty in understanding course content.
- Requests for feedback on a graded assignment.
- Private issues.
I will not respond to email that:
- Has a question that is answered in the course information.
- Lacks a subject line clearly stating the purpose of the email.
- Raises an inappropriate question.
Questions
In online courses it is normal to have many questions about things that relate to the course, such as clarification about assignments, course materials, or assessments. Please post these in the Q&A Forum.
Discussion Forums
Considering this in an online course, your weekly discussions will count for a good portion of your grade. Each week you will have a discussion where you will have to post one initial response and also at least tworesponses to your fellow students. Your initial post will be due on Thursday of each week with your responses to other students due by Sunday of each week. If there are changes to this schedule, you will be notified on Canvas. Changes will be posted in the Overview for the week, in the assignment directions, as well as in Announcements.

ASSIGNMENTS AND GRADING POLICY
All communication will be through Canvas and CSU email. Contact ITS Help Desk if you need assistance:
Weekly online class attendance is mandatory. Participation in posted assignments each week will make up your attendance grade. ALL requirements must be met to receive full credit for your attendance each week.
All assignments will be posted on Canvas by MONDAY of each week. You are required to complete all assignments according to the posted due dates.
Late policy. 5% of the overall grade for each day that an assignment/discussion is submitted late. For assignments, such as discussions, that have multiple due dates, the 5% rule will apply to EACH due date.
- For example, if you are late submitting your initial post on a discussion, you will lose 5% for each day the post was late. If you then are also late in submitting replies to other student posts, you will also lose 5% for each day the posts were late.
There is no extra credit available.
Grading Criteria
Please make sure you understand the criteria by which your class performance will be graded. You can view your grades using the GRADES button in the Canvas course navigation. Please check your grades regularly to make certain that I have received all your assignments. If you have a question about a grade, email me at esalami@calstatela.edu. Please do not post your personal concerns in a discussion forum.
LECTURE Grading
Project: One project will be assigned which will require a written portion and a short presentation over Zoom. More information on this project will be given during the semester.
Exams: There will be two (2) exams, one midterm and one final. Each exam is worth 30% of your final grade and will contain material from readings, PowerPoint slides, and lecture.

LAB Grading
